Abstract：
Amaranth was selected as the national OCOP (One Country One Priority Product), a special agriculture product in Mexico. Amaranth is deeply rooted in the lives of the Mexican people and has profound significance for rural development, environmental protection, women's employment, and traditional culture. Within the framework of implementation of OCOP Initiative in Mexico, the establishment of a State Committee for Amaranth Products has strengthened local governance and promoted close cooperation among producers, academia, communities, and the government. The amaranth project is not only about a product, but also serves as a driving force for transforming local agriculture, positively impacting nutrition, income, environment, and sustainable development.
